- 15 min preparation time
Ingredients
- 250g of wheat flour
- 125 g butter
- 60 g of granulated sugar
- 12 apricots
- 40 g of Sainte Lucie ground almonds
- 2 eggs
- 1 packet of intense vanilla sugar
- 3 tablespoons brown sugar
Gourmet tip
Add two sprigs of dried rosemary once the tart is baked.
Preparation
- In a mixing bowl, combine the flour, sugar, vanilla sugar, and diced butter. Rub the mixture together with your fingertips until the butter is incorporated and the mixture resembles coarse crumbs.
- Add the egg, then mix without overworking the dough. Form the dough into a ball as soon as it is smooth, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.
- Remove the pits from the apricots and cut them into 2 or 4 pieces. Roll out the dough with a rolling pin until it forms a circle 3 mm thick. Sprinkle the dough with ground almonds.
- Arrange the apricot pieces on the dough, leaving a 3-cm border. Fold the edges of the dough over the apricots.
- Scatter small cubes of butter over the mixture, then sprinkle with brown sugar. Bake for 30 minutes in an oven preheated to 180°C.
- Let it cool slightly before serving!
