Preparation
-
Wash the berries, then drain them thoroughly. Set aside a small handful of berries for garnish.
-
Blend the remaining berries to make a coulis. Strain the mixture through a sieve to remove any seeds, if necessary. Set aside in the refrigerator.
-
Separate the egg whites from the yolks. Whisk the yolks with the granulated sugar and vanilla sugar until the mixture turns pale and becomes fluffy.
-
Add the red berry coulis to the previous mixture, then stir until the mixture is smooth.
-
Whip the very cold heavy cream into soft whipped cream. Gently fold it into the red berry mixture.
-
Beat the egg whites until stiff peaks form, then gently fold them into the mixture using a spatula to maintain a light and airy texture.
-
Pour the batter into a loaf pan lined with plastic wrap or into individual molds.
-
Place in the freezer for at least 6 hours, until the parfait is firmly set.
-
Remove the parfait from the freezer 10 minutes before serving. Unmold it, and garnish with the reserved berries and berry coulis.
