Preparation

  1. Carefully clean the mussels by removing any impurities and filaments with a knife. Rinse them thoroughly under cold water, then let them soak for a few minutes to remove any remaining sand.
  2. Peel the potatoes, then cut them into sticks. Rinse them under clean water, then dry them thoroughly with a clean cloth.
  3. Peel and finely chop the onions or shallots. Melt the butter in a large Dutch oven and sweat the onions and celery together, without letting them brown, until they become tender and slightly translucent.
  4. Add the cleaned mussels to the pot. Pour in the white wine, stir in the chopped parsley and bay leaf, then season with pepper. Cover and cook for about 5 minutes, stirring occasionally, until the shells have opened completely.
  5. Sprinkle the fries with the Air Fryer fries seasoning mix. Cook the potato sticks in the Air Fryer while the mussels are cooking. Serve the mussels marinières immediately, accompanied by piping-hot fries and the sauce of your choice.
