Halloween Energy Balls

Energy Balls
  • 4 pers
  • 17 min preparation time

Ingredients

  • 100g pitted dates
  • 80g butternut squash purée
  • 100g rolled oats
  • 1 teaspoon of natural liquid vanilla extract from Sainte Lucie
  • 1/2 teaspoon cinnamon
  • 2 orange sugar pastes from Sainte Lucie
  • 1 green fondant icing Sainte Lucie
  • a small wooden aperitif pick

Preparation

  1. Place the dates, pumpkin purée, oat flakes, natural liquid vanilla extract, and cinnamon in a blender.
  2. Blend until you have a smooth batter. If the batter is too runny, add some oatmeal; if it is too dry, add a little purée.
  3. Shape the mixture into walnut-sized balls and flatten slightly to form pumpkin shapes.
  4. Take walnut-sized balls of orange sugar paste and roll them out thinly.
  5. Wrap each energy ball in sugar paste.
  6. To create the pumpkin effect, press down on the body of the pick following the curve of the pellets to leave an imprint. Do this all over the ball to create a pumpkin.
  7. Carefully press the handle of a spoon into the center of the pumpkins to make a small indentation.
  8. Take small pea-sized balls of green sugar paste and shape them into small cones. Brush the widest base with a little water and place in the hole in the pumpkins.
