How to make a chocolate glaze?

Topping

Chocolate glaze is the perfect way to turn a homemade cake into an irresistible dessert. Shiny, smooth, and indulgent, it adds that finishing touch that makes all the difference. You don't need to be a pastry chef to make it: with a few simple steps, you can easily create a chocolate glaze worthy of a pastry shop window.

In this article, we explain how to make chocolate glaze easily, which ingredients to use, and what little tricks can save the day.

Why is chocolate topping so popular?

We love it so much because it ticks all the boxes:

  • it adds shine,
  • it intensifies the taste of chocolate,
  • it provides a smooth and even layer,
  • and above all... it instantly gives a dessert a professional look.

Originally, frosting was mainly used to protect cakes from air and moisture. Today, it has become a real aesthetic asset: perfect for smoothing a dessert, covering a cake, or even enhancing fruit.

The essential ingredients for a successful chocolate glaze

To make a simple and effective glaze, you will only need a few easy-to-find ingredients:

  • 200 g dark chocolate (chocolate chips or chunks)
  • 200 ml whole liquid cream
  • 30 g butter
  • 1 to 2 teaspoons of sugar or vanilla sugar (optional)

Tip: Choose a chocolate you like! And of course, you can replace dark chocolate with milk chocolate or white chocolate if you prefer a sweeter result.

How to make chocolate icing? A simple, foolproof recipe

No need for complicated equipment: just a saucepan, a salad bowl, and you're ready to go.

1. Opt for chocolate chips

They will melt easily. This is THE little trick that prevents lumps from forming.

2. Heat the liquid cream.

In a saucepan, let it heat up slowly until it simmers slightly, without boiling.

3. Pour the hot cream over the chocolate.

Leave to stand for one minute, then mix from the center outwards.
You'll see: the glaze will become shiny all by itself!

4. Add the butter.

It provides flexibility and, above all, a glossy finish.

5. Allow to cool before using.

Warm = smooth, fluid glaze
Cold = thicker glaze for decorations

A few tips for an even more successful topping

Let your cake cool

A warm cake would melt the frosting and absorb it.

Adjust the thickness to your liking.

  • more chocolate = thicker coating
  • more cream = more fluid topping

Mix gently

This prevents air from being incorporated and ensures a smooth coating.

For a white or milk glaze

Adjust the amount of sugar to suit your taste.

Topping or glaze: what's the difference?

The two are often confused, and yet...

  • The chocolate coating is richer, glossier, and smoother, perfect for covering a cake.
  • Icing is often made from powdered sugar (royal icing, buttercream, cream cheese, etc.) and is also used for decorating, writing, coloring, etc.

In summary:
For a shiny, indulgent finish, opt for a chocolate coating.
For a more precise decoration, it is better to opt for a glaze.
